15 Amazing Asparagus Recipes (1)

Oh asparagus, I adore thee.

When spring comes around, my heart leaps at the sight of your arrival. I love roasting you and enjoying you simply with a runny egg and parmesan cheese for a lazy dinner. I can’t get enough of you in salads, especially when you’re blanched, and laying beside potatoes and salmon, dressed in a mustardy vinaigrette. You’re particularly delightful baked into a fluffy quiche or folded into a delicate omelet. When tossed in pasta, you’re exquisite, and when pureed into a creamy soup, you embody the essence of spring. You’re so fresh, so green, so tender. And I will eat you up all spring and summer long.

If any of you out there share my sentiments on asparagus, you may want to investigate every recipe we’ve gathered for youbelow. From a clever (and healthier) take on fries, to one of the most colorful and festive spring salads you’ve ever laid eyes on, you’ll see asparagus in a variety of forms. Our motto this season is, when in doubt, put some asparagus in it.

Happy spring, and happy asparagus-ing!

FAQs

Why you shouldn't cut the ends off asparagus? ›

It is not necessary to trim asparagus. On some spears, especially fresh, pencil-thin stalks, the woody ends may tenderize once cooked. But on larger stalks, the ends of the asparagus are often woody and dense—Which makes them difficult to chew, no matter how soft the asparagus is after cooking.

Why do you soak asparagus in ice water? ›

Shock the boiled asparagus in an ice bath.

The ice bath method stops the vegetables from cooking more, and keeps the beautiful, vibrant green color. Drain the blanched asparagus.

How do you cook asparagus Rachael Ray? ›

Pile asparagus onto a baking sheet. Combine lemon, shallot, extra-virgin olive oil and tarragon. Pour the dressing over the asparagus and turn to coat spears in fat. Season the asparagus with salt and pepper and roast 15 to 17 minutes at 375 degrees F.

Does asparagus get more tender the longer you cook it? ›

Does asparagus get softer the longer you cook it? Yes, it does. But you don't want to cook it too long or it will be soggy. That's fine when using in a soup, but not so much as a roasted side.

When should you not eat asparagus? ›

By the time the tips turn black, you'll notice they're completely mushy and probably smell a little funky, too. If your asparagus is slimy or sticky, feels mushy and soft, smells foul or has visible signs of mold, it's time to toss it.

Why is it better to snap asparagus than cutting? ›

For many people, the easiest way to eliminate these woody stems is to break them off by bending them until they snap in two. The conventional wisdom is that this natural snap-off point is where the unpalatable toughness ends, and the tender asparagus begins.

What is the trick to asparagus? ›

Snapping. Snapping off woody asparagus bottoms gives you spears of slightly different lengths, but guarantees no tough ends when you sit down to eat. To snap, hold a spear with both hands and find the natural bending point near the bottom of the stalk. Then snap.

What is the healthiest way to eat asparagus? ›

Try adding shredded, raw asparagus to pasta dishes and salads. Alternatively, enjoy the spears lightly steamed or sautéed in a frittata, or as a stand-alone side dish. Asparagus is a nutritious choice, regardless of whether it's cooked or raw. Try eating a combination of the two for maximum health benefits.

Why do chefs peel asparagus? ›

6 Answers. I've heard the same recommendation before - the idea is that if asparagus is very thick (say, 1/2 inch or more in diameter), and if the bottom is much thicker than the top of the spear, then peeling it will help it to cook more evenly.

Do you wash off asparagus before cooking? ›

Before working with asparagus in the kitchen, it's important to clean it. Start by rinsing the spears under cold water to remove any dirt. You can pat asparagus dry with a clean dish towel or roll the spears between two towels to blot all of the water if desired.

Which is better thin or thick asparagus? ›

"In supermarkets, shoppers will see thin spears of asparagus bunched and marketed as 'tender gourmet' style," says Peter Ferretti, professor of vegetable crops. "In reality, spears that are larger than a half-inch in diameter are more tender and higher in soluble fiber and vitamins than the thinner spears."

Why is my asparagus chewy after cooking? ›

I would agree that you are overcooking. I quite often make pasta with asparagus and a cheese sauce, and I cut the asparagus up so that the tips are about 1" long, getting shorter towads the opposite ("woody") end, as the smaller chunks decrease the cooking time for the tougher parts.

Should I cut the tops off my asparagus? ›

Pruning Asparagus Plants
  1. Wait until all the foliage has died back and turned brown or yellow. ...
  2. Cut the plants back to the soil surface and apply mulch to help against deep freeze or changes in soil temperatures. ...
  3. If you have issues with disease or insects, it's best to cut the tops off of your asparagus.
