26 Vegan Mother's Day Brunch Recipes! (1)

Some of these recipes are on the fancier side, while others are super easy to whip up. So no matter your level of kitchen skill, or how much time you have, these vegan Mother's Day brunch recipes will be sure to please.

EASY VEGAN SHEET PAN PANCAKES

Just whip up the 8 ingredient batter made using pantry staples you likely already have on hand, spread onto a baking sheet, decorate with toppings as desired, and bake for 15 minutes. Boom! Breakfast on the table. Evenly cooked, SUPER FLUFFY, hot all at the same time, and with endless flavour combos. Perfect pancakes every time! These are super easy to make, perfect for a last-minute vegan Mother's Day brunch.

VEGANIZED: TASTY'S BUTTERMILK PANCAKES

For the buttermilk, I subbed plant-based milk mixed with lemon juice. Mixing in the lemon juice makes the plant-based milk curdle making instant DIY buttermilk! For the eggs, I skipped replacing the yolks, but I did replace the egg whites with aquafaba, which is the liquid in a can of chickpeas. And of course, the butter was an easy sub as I just swapped in vegan butter. The result is a delicious, fluffy pancake you would never know was vegan.

VEGAN FRENCH TOAST

If you are looking for a classic tasting vegan French toast recipe, I recommend checking out my Heavenly French Toast recipe in my cookbookFuss-Free Vegan. But if you are looking for something a little more unique, then stick around here because this vegan French toast is made with bananas and coconut milk, with a touch of cinnamon for a very special treat. This rich fruity combination takes French toast up several notches to make you feel like you're feasting on the most luxurious dessert for breakfast. But the best part is: it's so easy to make!

VEGAN GINGERBREAD WAFFLES

If you love gingerbread and you love waffles, well, the answer is obvious isn't it? These Vegan Gingerbread Waffles are super easy to make but OMG are they delicious. Rich molasses, hints of spice, slightly sweet fluffy waffle goodness, topped with a dollop ofVegan Coconut Whipped CreamorEasy Vegan Marshmallow Fluffif you so desire (which you should clearly desire).

VEGAN BANANA NUT MUFFINS

These Vegan Banana Nut Muffins are so super MOIST. And I mean that in all the best ways possible. Bursting with banana flavour, little pops of nut crunch, tender, lightly sweet, and gorgeously moist. Mm mmmmm!

EASY VEGAN LEMON SQUARES

These lemon bars are so easy to make and are a perfect combination of fresh, tart lemon curd and a crumbly, buttery shortbread crust. Sweet and buttery and perfect for an Easter treat or a spring dessert.

VEGAN HUEVOS RANCHEROS

Vegan huevos rancheros is a super hearty and satisfying Mexican-inspired breakfast dish. I love making this with my vegan fried eggs but if you prefer you can make it with a tofu scramble. Whatever you're feeling.

VEGAN FRIED EGG

For my vegan friends who crave a fried egg, for anyone who wants to try an easy, fun, and playful recipe, I bring you my vegan fried egg. You mom will surely be very impressed if you present this fried egg with your vegan Mother's Day brunch.

TOFU SCRAMBLE: BREAKFAST OF (VEGAN) CHAMPIONS

I present to you, my favourite tofu scramble. Full of flavour without being full of salt, lots of texture with red peppers, mushrooms, and black beans, and hearty enough to fill even the hungriest of muscle covered vegan dudes.

THE ULTIMATE VEGAN BREAKFAST SANDWICH

If you have laid your hands on a copy of Fuss-Free Vegan cookbook, then you will know that I have dedicated an entire chapter to vegan breakfasts. Sometimes, as a vegan, a really hearty and satisfying breakfast can be hard to come by. Smoothies and granola just ain't gonna cut it some days. Good thing we can now make The Ultimate Vegan Breakfast Sandwich right in the comfort of our own homes. No need for brunch restaurant line-ups anymore!

BANANA PEEL BACON

Yes, you read that right, this is banana peel bacon. A vegan bacon recipe made from the banana peels that you would otherwise toss away. Am I crazy? Maybe a little. Does it taste good? Yes, it does. It really, really does!

VEGAN DEVILED POTATOES

My thoughts: everyone likes potatoes, no one is afraid of potatoes (except those carb fearing types), everyone likes cute handheld appetizers, and these vegan deviled potatoes are just so darn cute and tasty, I'm pretty sure no one will be able to resist enjoying at least one.

VEGAN BAKED BRIE IN PUFF PASTRY

Gooey homemade easy-to-make vegan brie cheese is paired with cranberry sauce, walnuts, and wrapped up in flaky crispy puff pastry. Don't be surprised when this gets gobbled up at lightning speed. Make this brie for your vegan Mother's Day brunch and I bet your mom will be super impressed!

This Vegan Mushroom & Walnut Pâté was delicious while it lasted which was for approximately 16 seconds. Ok, well I am exaggerating a bit, it was more like 16 minutes. For real tho.

Well hello Olive & Sun-Dried Tomato Rustic Tapenade. How are you on this fine day? Fabulous, I can tell. Tapenades are usually a dark paste made of ground up olives. Now that's all fine and dandy, and there is nothing wrong with that, but gosh, why would you paste it all up when instead you can celebrate all of this gorgeous colour and texture? This is one fine toast topper. Hello perfect party appetizer. Make ahead, colourful, and gorgeous. The flavours of the salty and rich olives, the sweet chewy sun-dried tomatoes, fresh basil, garlic, and a bright note of lemon throughout.

COCONUT MUSHROOM PUFFS

These Coconut Mushroom Puffs make the cutest little appetizers, don't you think? They are surprisingly easy to whip up too. You can even make the mushroom mixture ahead if you like, and about 30 minutes before you would like to serve them, just fill the puff pastry cups, and pop them in the oven!

BAKED VEGAN ZUCCHINI FRITTERS

These Baked Vegan Zucchini Fritters served with a dollop of sour cream, a side of apple sauce, some home fries, and a light salad would be just divine. Light, healthy, easy to pull together, fancy looking, fancy tasting, all the fancy things I like in a recipe. If your mom loves savoury food, these fritters will be the perfect addition to your vegan Mother's Day brunch.

Sweet mustardy sticky skillet cauliflower florets, on a bed of crispy romaine, with the zing of red onion, pops of cherry tomatoes, and creamy avocado. I mean, I could just end the post right here and I'm pretty sure I've sold you on this salad already.

SUPER EASY VEGAN CROISSANTS

Super Easy Vegan Croissants are not a myth, they are real! What is the magical secret?? PUFF PASTRY! Did you know that a lot (like most) store-bought brands of puff pastry are accidentally vegan? It's true, just take a gander at the ingredients and you will see. Puff pastry is made with tons of layers designed to become flaky and puffy. See where I'm going with this? This recipe is not even a recipe because it's literally just like "buy some puff pastry, roll it into croissants". Yeah, it's almost TOO easy.

EASY VEGAN LEMON CURD

This vegan lemon curd requires only 6 ingredients and takes 10 minutes to make! Pour this into a fancy jar and tie a little bow or serve as a luxurious addition to breakfast in bed. Oh la la!

VEGAN STRAWBERRY OAT BARS

Sweet gooey strawberry filling surrounded by crumbly oatmeal cookie pastry, these old-fashioned vegan strawberry oat bars are summer dessert perfection!

VEGAN CHAMPAGNE CUPCAKES

Now aren't these just the cutest little cupcakes you ever did see? The bubbly Champagne in these cupcakes makes the cake extra light and fluffy and you can definitely taste a hint of that sparkling deliciousness. I also infused some champagne into the frosting. I'm telling you these cupcakes win at life! They are similar to my vanilla cupcakes but kicked up one giant serious notch. So pop that Champagne, and share a glass with your good ol' buddy cake. 🍾

VEGAN RED VELVET CHEESECAKE BITES

So pretty, so swirly, so creamy, so decadent, so surprisingly easy to make. These vegan red velvet cheesecake bites look fancy pantsy, and while they do have a few steps to make them, I assure you that each and every step is easy to do. If your mom like cheesecake, these will be the perfect treat for your vegan Mother's Day brunch.

VEGAN EARL GREY CUPCAKES

This cupcake tastes like if a cup of earl grey tea, and marshmallow had a baby, and now you just want to eat that baby... but it's totally vegan I swear. The cupcakes have a potent earl grey taste, but are still light, fluffy and sweet. The frosting has just a kiss of earl grey, so not to over power your taste buds, and adds a creamy dreamy, lift your pinky, then shove the whole cupcake in your mouth in one go (what?), delectableness.

VEGAN STRAWBERRY SHORTCAKE

Strawberry shortcakes have always been one of my favourite summer treats, so I have no idea why it took me so long to vegan-ize this recipe, but I'm so glad I finally did. These vegan strawberry shortcakes taste just like the traditional recipe, except even better!

EASY VEGAN CINNAMON BUNS

I hacked this recipe so these vegan cinnamon rolls are as easy as possible to make. No yeast. No rising. Only 10 ingredients. No weird ingredients. Freezable. Completely addictive← you have been warned.

I hope you enjoy these 26 Vegan Mother's Day Brunch Recipes! And I hope you enjoy this very special day! Mom's are the absolute BEST and I know I would not be where I am without mine.
