Not to get all sciencey, but according to Straight Up Eats:

The baking soda changes the PH level and the flavor of the noodles making them more similar in texture to chow mein noodles!

So, how much is “a little bit of baking soda”? The rule of thumb is to use one tablespoon of baking soda for every 4 cups of water.

Can You Cook Noodles in an Instant Pot?

Yes! You can make instant pot noodles. The cooking time will depend on the type of noodles you are trying to cook, but here are some basics to help you.

You want to close the lid on your pressure cooker before you start to cook. Then, make sure the valve is setting for high pressure.

After 5 or 6 minutes (please find exact instructions on your noodle packaging), you will need to do a quick release of the pressure valve before you open the pot.

The quick-release portion is the important part because noodles continue to cook otherwise.
