This creamy and hearty mushroom soup recipe is one of the best soup recipes! The flavors of the sauteed mushrooms, onions, garlic and the creamy soup base is truly so delicious. This homemade cream of mushroom soup is the ultimate comfort food.

INGREDIENTS-

  • Mushrooms– You can use white button mushrooms, portobello mushrooms, cremini mushrooms or any other fresh brown mushrooms.
  • Oil– Olive oil to sauté the mushrooms.
  • Butter– The butter gives this soup that creaminess!
  • Onions– Finely chopped onions are called for this recipe.
  • Garlic– You want to use freshly minced garlic for this soup.
  • Broth– For this soup we used chicken broth but you can also use vegetable broth or beef broth.
  • Flour– Flour is to add thickness so that your soup is nice and thick.
  • Seasoning– For the seasoning we use salt and pepper but you can also add your other favorite seasonings.
  • Heavy Whipping Cream– We use heavy whipping cream for this soup but you can use half and half also!

HOW TO MAKE MUSHROOM SOUP-

This hearty soup recipe comes together so quickly, that perfect easy soup recipe!

  1. Sautee the mushroom and remove from the pot.
  2. Sauté onions then add garlic and cook until fragrant. Add the mushrooms back to the pot and whisk in the flour.
  3. Pour in the broth and seasoning and cook on medium heat.
  4. Add in the heavy whipping cream and bring to a simmer.
  5. Serve with freshly chopped greens.

Ingredients

  • 2 Tbsp oil
  • 24 oz mushrooms sliced
  • 1 small onion finely chopped
  • 4 Tbsp unsalted butter
  • 3 garlic cloves minced
  • 1/4 cup all-purpose flour
  • 32 oz chicken broth
  • 1 ½ tsp salt
  • ½ tsp ground black pepper
  • 1 cup heavy whipping cream

Instructions

  • In a large pot or Dutch oven, heat oil over medium/high heat. Add sliced mushrooms until fully cooked and golden.

  • Once mushrooms are cooked, remove the mushrooms from the pot.

  • Add buttre and saute the finely chopped onion until onions are tender. Add in minced garlic and cook until fragrant. Add the mushrooms back to the pot and whisk in the flour.

  • Pour in the broth and seasoning and cook on medium heat for about 10-12 minutes.

  • Add in the heavy whipping cream and bring to a simmer.

  • Top with freshly chopped greens and serve.

  • Enjoy!

    I just made this for lunch. I had extra mushrooms from a quiche that I made. So easy to make with ingredients I had in the pantry. I even messed up on how I sauteed the mushrooms and onions and it still came out delicious. I used half and half because that’s what I always keep in my fridge for coffee.     Oh wow. It is a keeper. Very easy to cook and I did add potatoes as previous comment mention as well as the meat. The soup came out very filling and I served it with garlic bread. It was the dinner of the month. 🙂
