However, this recipe does not have to have all of that sugar in it!

However, this recipe is specifically for anyone asking how to make that same eggnog but, without having to add of that sugar too. Luckily, you can get that same great festive eggnog taste without all of that sugar.

This recipe for eggnog does indeed include all of the essential eggnog ingredients that you may expect to find.

Traditional eggnog is usually made with milk, eggs, sweetener, and spices. There may be additional ingredients or similar ingredients substituted (cream for milk for example).

There are folks who ask why is eggnog so bad for you.

Certainly, this may not be a beverage that most people should consume on a daily basis.
There could be some concern especially if the eggnog contains a lot of heavy cream or sugar in it.

However, the real concern that has to do with eggnog is most likely when raw eggs are used in it.

Contracting salmonella, according to the CDC, can result from consuming raw eggs. To prevent this from happening we can use real eggs and simply temper them to get a similar result to the pasteurized eggs that are used in commercially sold eggnog.
The CDC recommends that we cook or temper our eggnog base to an internal temperature of 160 °F, stirring constantly. The tempering should thus destroy any Salmonella (according to the CDC). If you would rather use an alternative to eggs, the CDC says that you can also use egg substitute products or pasteurized eggs in your eggnog.

Mentioned above was that we will have to cook the egg yolks in this recipe to 160 degrees (f) to make them safe for consuming according to the experts. A workaround for this would be to use already pasteurized egg yolks.

As noted above, possibly the most important thing to remember in this recipe is tempering the egg yolks to minimize the risk of catching salmonella. To do this, heat or temper the egg yolks on the stove, whisking constantly, to 160 degrees (f) to make them safe for consuming according to the experts. A workaround for this would be to use already pasteurized egg yolks.

Simply swap out your milk with a nut milk, coconut milk for the heavy cream and soaked raw cashews for the eggs. Choose sugar free options if sugar is also a concern.

Ingredients needed to make sugar free keto friendly eggnog.

  • Eggs- 6, separated. You can use the egg whites as a froth for serving or simply freeze them away to use later. Vegan folks can use soaked cashews, you will need to have to test the amount needed for this recipe.
  • Sugar Alternative- equivalent to ¾ cups of sugar. Does not have to be granular (I rarely get to say that 🙂 ).
  • Milk or Heavy Cream- 4 cups divided. The more fat=the richer your eggnog will be. Heavy Cream is friendlier to low carb diets. Vegan folks can sub in a nut milk such as almond milk.
  • Vanilla Extract- 1 teaspoon.
  • Ground Nutmeg- 1 teaspoon, plus additional needed for serving.
  • Heavy Whipping Cream- 1 cup. Vegan folks can use unsweetened coconut milk. This for a whipped topping and can be omitted.
  • Optional- Make your eggnog boozy by adding rum, cognac, or whatever works for you.

How to Make Sugar Free Eggnog

  • On low heat and in a heavy saucepan, combine together the egg yolks and sugar alternative. Heat this whisking continuously as we do not want to cook the eggs, just simply temper them. After one minute you can add half (two cups) of the milk. Use a thermometer to monitor the temperature and continue to whisk as needed. When the heat reaches 170 you can remove this from the heat (20-15 minutes). Please keep an eye on it as it tempers.
  • Remove the tempered ingredients from the stove. Whisk for one minute and then add then remaining milk, vanilla extract, and nutmeg. Alcohol can be added as well.
  • Cover and refrigerate for until chilled (1-3 hours depending on how chilled you want it to be).
  • To serve, whisk the eggnog and then pour the eggnog into individual cups. Beat the heavy whipping cream until it peaks (or egg whites if you are using that method). Serve with the whipping cream stirred in or as a topping along with additional nutmeg.
